I wish I had taken screenshots of all the weird checkmates that I encountered (both on the winning and losing side), but as one smart person said - to begin, begin. So here it is. Sooner - better than later, but later is better than never.
 

Mate with a knight only. Black's king is trapped by its own pieces, and the only square it could technically escape is controlled by the checking knight.

Checkmate - King's Gambit. Some of the weirdest - and quickest - checkmates come from King's Gambit. Love this opening!

This one is one of my all-time favorites. It's also a product of King's Gambit, but look where black's king is!

Another checkmate with a knight, while the king is cornered. But wait, there's a bonus! It's a simultaneous attack on both the king AND the queen.
